Egg Bake
Perfect for those busy mornings
Ingredients (makes 12)
12 eggs
1 cup cottage cheese
2 cups baby spinach
1 red bell pepper, diced
2 scallions, chopped
Salt & pepper
Instructions
Place the washed, slightly damp baby spinach into a large microwave-safe bowl. Cover with a lid or plate and microwave for 1 minute. Let cool. Squeeze the water out of the spinach, and pour out the excess water.
Add the red bell pepper and scallions to the bowl with the spinach.
In a blender or food processor, blend the cottage cheese and eggs until smooth. Pour the egg mixture into the veggie bowl. Season with salt and pepper. Combine.
Pour into a greased 9x13” baking dish. Bake at 350°F for 30-45 minutes, or until the center is set.
Allow to cool, then cut into pieces. Store in an airtight container in the fridge for up to 1 week.
