easy tofu pudding
with ✨womanly ingredients✨
Ingredients (serves 2)
1 package (14 oz) silken tofu
2 tbsp Chinese brown sugar
1/2 cup water
4 tbsp sweetened red beans
2 tbsp crushed peanuts
Sweetened red beans:
1/2 cup dry red beans (adzuki)
3-4 tbsp sugar
Pinch of salt
Instructions
Add 1 tbsp brown sugar and 1/4 cup water into each serving bowl. Microwave for 1 minute, then mix until the sugar is dissolved.
Spoon the silken tofu, making shallow scoops, and place into the sugar water. Optionally, microwave for another minute to serve warm.
Top each bowl off with sweetened red beans and crushed peanuts.
Preparing the sweetened red beans:
Wash the red beans and soak in a bowl of water overnight or for at least 8 hours.
Drain the beans and place into a rice cooker bowl, along with enough water to cover the beans by 1 inch.
Cook on the “multigrain” setting. The beans should be very tender, so you’ll be able to easily mash it between your fingers. (Alternatively, you can pressure cook the beans for 20-25 minutes.)
Mix in the sugar and salt, and let cool to room temperature. Store in an airtight container in the fridge for up to a week.
